Baked Satsumaimo (Sweet Potato)


Baked Sweet Potatoes


1 sweet potato, cut into large chunks
1 tablespoon mirin
1 tablespoon vegetable oil


1.       Preheat the oven to 400 degrees. While it's heating, toss the sweet potatoes in the mirin and oil.

2.       In a small to medium size glass baking vessel arrange the potatoes face down.

3.       Bake for at least 30 minutes, and once the potatoes begin to brown rotate them so that a new side begins to brown against the pan.

4.            Once the potatoes are soft and gently golden brown, remove from oven. The insides should be delectably soft. Serve hot or cold.

*Note: If you are cooking other elements to the meal, start these first as they can take a bit of time.
