Daikon seaweed

This is a simple salad for when you are feeling lazy. Outside of the pantry items of mirin, vinegar, and nori – there’s only one ingredient: the humble daikon. This salad is naturally bitter, but in a pleasant way. It helps to cleanse the palette. Serve with any dish that has a thick sauce.

Ingredients:

½ daikon (Japanese radish), peeled and cut into thin quarters
2 tablespoons mirin
1 teaspoon rice vinegar
Roasted seaweed (nori) to garnish

Instructions:

1.       In a bowl, soak daikon in cold water for 10-15 minutes. This will help to reduce bitterness.
2.       Drain and dry with paper towels.
3.       In a large bowl, mix together mirin and rice vinegar with the daikon.
4.       Plate and garnish with nori as desired.
